Dear cerbaco,
 
Apologies to Max Allen who actually wrote all  these realistic and fine descriptions of ciders and perry which we failed to acknowledge to be his . 
It is unforgivable and unfair since we could never have matched the elegance of his style.
This is why we are re-sending this newsletter to give back to Caesar what belongs to Caesar.
 
Happy new year and hope that 2009 will be not as bad as everyone loves to  predict.
Life continues and your shelves have to be still filled with good products.
 
Also, we take this opportunity to let you know that all ciders and perry are back and fresh....
 
 Few notes on ciders... 
"These poor man's champagne make you regret not to be poor"
 They are true rustic, farmhouse style Normandy and Brittany ciders. They are bottle conditioned (a secondary, fizz producing fermentation takes place inside the bottle. It is cloudy in appearance and have bits of old yeast floating in them, like coopers ale. As well as the intense flavor of tight little apples, there are undeniable funky aromas that romantics like us perceive as the smell of barnyards and hay and old barrels but technocratic tasters dismiss as microbiological spoilage.
They are drinks with heaps of character.

 Cidre Bouché : Slightly dry,lovely fresh dry apple taste. A smooth finish.

Perry: Made with pears. Semi dry, have a lovely sweet/ dry pear taste. Goes beautifully with goat Cheese

It is bottled in an old barn on the farm. There can be enormous bottle variation: some can have more of the fresh, tart apple character than others, while some can be really, really funky.  The best bottles balance fruit and funk, and taste is particular.It is spectacular with the intense flavours and texture of a farmhouse cheddar.

 To complete our range of styles and origins of cider, we bring you as well a cider from Brittany more specifically from Cornouailles (Cornwall, but in Brittany).
This style is more effervescent, complex, rich and with a lovely bitter/sweet finish which will surprise you.
