An intense quince paste and stewed apple nose, little or no oak influence but a hit of volatile acidity. The fruit is deep and pure though. Intense stewed apple, tarte tatin flavours in the mouth with soft spirit and an easy fruity close. Excellent intensity. Finishes with toffee apple and galangal.

Adrien Camut

            Since the 1800s, the Camut family has grown 115 acres of apple trees in the Pays d'Auge, the finest growing region for Calvados. In Normandy, 800 types of apples are grown; the Camut family grow about 25 of these, all of which are hand-harvested at optimum maturity between October and mid-December. While pears are allowed in Calvados (actually mandatory in the Domfrontais region with a minimum of 30%), only apples grown on the Camut property are used in Camut Calvados.

Old vanilla creamy smelling with plum and rhubarb crumble: Complex although the oak is a little prominent on the nose. Really tangy and rich in the mouth though, has lots of flavour, almost quince paste. Very, very long and deliciously spicy.

The magic of the ageing. The crystal clear color. Has this stage of the ageing, we lost about 50% of alcohol the part of the angels. This natural reduction allowed the evaporation of practically all the alcohols fowls and the concentration of the aromas of apples with now, the alliance of a wooded taste, returned slowly and without tannin. (Less than 2% use of new barrel).
