About Cerbaco

The true specialists in Armagnac, Cognac
and Calvados Liqueurs...for 30 years

At Cerbaco, over the last 30 years, we have endeavoured to always search and find the very gems of Spirits, Aperitifs and Liqueurs. Often they are confidential, non commercial, artisanal, beautifully authentic and sincere in their quality. For example if a cognac is 35 years old, the whole of it is 30YO, not a lot of 10YO + a small dash of 30YO. Initially we knew well the 2 or 3 stars restaurants of France, who carried such products and would never have touched any commercial spirit. They introduced us to their producers who deemed us worthy of their trust. And over the years, with that same philosophy we pride ourselves to have widened the range and offer not the best known, but just the best of Gins, Whiskies, Rums agricoles, Calvados, Aperitifs, Bitters,Tequilas,Vermouths, Absinthes, Liqueurs, Ciders, Armagnacs, etc.

The ultimate in olfactive beauty is the phenomenon of the “Peacock Tail Fan Effect” of which old armagnacais speak with tears in their eyes “Faire la queue de Paon” about an Armagnac which stands out. After you have swirled a few drops in the mouth and swallowed, after a few seconds you think it is the end of it, when suddenly an explosion of aromatics invades you in the most ethereal and surprising way. I remember in a village in the Armagnac region being directed in secret whispers to a hidden cellars where two older gentlemen, béret screwed on their head, offered me a snifter of “Grand Bas” warning me about the explosion imitating olfactively the visual effect of the deploying of a peacock tail . I was amazed and immediately asked to import such marvel in Australia. They sheepishly confided, that they could not export, since then the Tax and Excise people would discover them.

We pride ourselves to have in our range a few Rums, Armagnacs, Cognacs, Whiskies with that “Peacock Fan Tail Effect”, and what’s more they have fully paid their taxes !!

Gabriel Chaise

One of Australia’s leading minds when it comes to cognac, Gabriel
Chaise, the suavely mannered and mellifluously-voiced man behind Cerbaco Distribution. Gabriel runs master classes for both the
trade and the public on cognac, and when you hear him talk about this
spirit it is easy to see why such classes are so successful. “First and
foremost when it comes to cognac – concentration of aromatics,” he
said. “Quality of distillation, the correct ageing – a few Australian brandies
can do this, yes. But you need a very bland base wine to make great
cognac, because this allows the aromatics of ageing to shine. Use the
wrong base wine and the resultant spirit, well… Put a rainbow on a circle
and turn that circle very fast – it all turns white. Nothing stands out.”

His passion and knowledge as shaped Cerbaco into a promising enterprise, where quality is not left behind.

“I arrived in Melbourne in 1998 and met Gabriel a year later. We fell in love. Then he introduced me to this fantastic world of Spirits and I fell in love again and we decided to share life and work together!

What I really enjoy in my job is the human side in the hospitality industry and furthermore is working with the fantastic people and brands I have the privilege to represent.

Through my years in Cerbaco I discovered the real sense of passion, patience and humility!

That makes the beauty of these Spirits!!!

My first Coup de Coeur is Armagnac!!! “

I have been working in the liquor industry since 2004. Representing Cerbaco in NSW and ACT since 2010. I had the privilege to promote new products, work on new categories like Absenthe and Armagnac, embracing the market trends and opportunities to increase sales and distribution.

Over the last twelve years, I have built a strong relationship with my clients and understand their business needs and aspirations to help implement solutions, improving their range and always delivering quality products and services.

I enjoy working collaboratively with industry peers to enhance my knowledge and further sharing with my clients through training and support, like master classes.

Favourite spirit: Armagnac

I was born in Paris in 1985, from an ever-loving mother and a Corsican father.

If my day-to-day work belongs to Australia, my heart remains in France and Corsica!

I arrived in Canberra in 2010 to learn about Touch Football – I still represent France at the international level. In 2014, I meet Valerie Blayac (Cerbaco’s owner) and Mauro Ribeiro (NSW manager, top sales rep and friend). They offered me the position with trust and support. I responded with vision and ambition.

I find Cerbaco’s portfolio beautiful and unique, thanks to the determination and intelligence of our Founder Gabriel Chaise. Following his footsteps, I try to make my work inspiring and meaningful. Working directly with people, getting to know each other and creating great moments together is what gets me out of bed every morning. They are also some strong values behind our work that I’m proud to represent: family heritage, local traditions, intense passion and strive for excellence.

My goal is to develop strong relationships within the hospitality community. I also focus on developing a healthy business for Cerbaco, with processes and structures in place, to better service our extended family of producers and customers.

My favourite drink has to be Armagnac, always enjoyed with moderation and friends!

Born in 1985 in a little town near Lyon in France, I always been interested by everything coming from all around the world. Food, art, wine and obviously spirits! How lucky are we to have access to products coming from everywhere, with each one its identity, its history.

Arrived in Perth in 2014, I was lucky after a short passage in hospitality, to work for one of the best wine distributor in WA. 3 years to refine my palate, my knowledge, and enough to reinforce my desire to discover more!
I have now the privilege to look after the WA as brand Ambassador since 2016.
I like to see the sparks in the eyes of my customers during a tasting, sharing my passion about our products with always the idea of drinking better quality products.

During my spare time, I love playing golf, it’s always a good moment to share with my friends, far from the noise of the city!

I have a real love for agricole rhum from Martinique, Guadeloupe and Marie Galante. Maybe because the French West Indies are probably my favorite place in the world and I have lots of good memories there.

I am aswell a huge fan of Cognac, especialy the Paul Giraud range.

Bettina is the memory bank of Cerbaco, having worked here for many, many, years. She’s so multi-‘experienced’ that back in the day she went from taking an order to packing it, booking it in for pick-up, and driving the forklift to put in on a truck. And that’s not to mention the vast amount of financial and accounting work that she churns through every week these days!

Sha has been the administrative spine from which all the other strong bones of daily operations have grown, and we could not do without her.

She also quite fancies going out to dinner on a regular basis and may be seen looking just a bit glamourous in venues north OR south of the river…

We have gained access to their products which are in all good restaurants and bars in France, who do not carry many commercials, and for many years now, we are supplying them to the good restaurants and bars of Australia, who know us well.

Accordingly in Australia the great majority of good restaurants, a fairly large gastronomic elite, relish their authenticity of age and maturation, the specificity of characters related to precise origin, their astonishing and lasting beauty compared to commercial stereotypes.

Their price reflects the principle of true quality to be neither cheap nor expensive. At most their aspect is sober, for what matters is the content.

I’m Australian! I’ve worked in restaurants, functions, bars, selling wine over the phone, bottle shops, and wine wholesale in Sydney and have the WSET Advanced Cert. amongst other wine studies. After moving to Melbourne and working at home alone for too long I found a job at the ‘Spirit World’ of Cerbaco in 2015. And what a world it is. DELICIOUS. The little Dogga in the picture is Juno and she’s a ‘retired volunteer’ at Cerbaco.

I love giving great customer service, and untangling tricky delivery mishaps.. And generally doing booze administration. I still love wine, and spirits, but the data has called me, and I have answered. Over the last few years this means that I’ve honed my System Admin skills on Netsuite, and love getting my brain around solving business process problems.

My favourite grape is Chardonnay (I’ll never let the wine go…), and my favourite spirits from Cerbaco are the glorious Agricole Rums form the Caribbean. And one of my favourite things about working at Cerbaco is Rachid lining up three different rums to try at 10:30am. I am up to the task

This wild mountain-man from The Alps has finally been domesticated in Cerbaco’s warehouse, after defecting from the hospitality industry.

He brings his extensive knowledge of alcohol, and top-notch organisational skills, to have our warehouse functioning like a well-oiled machine. And helping with the odd Armagnac question or three.

He’s a great addition to our team!
